For the last month and a bit my fiancé and I have been on the road almost every weekend travelling around the U.K. This past weekend was no different where we hit the road and headed south to London to visit family.
While travelling, one of our favourite things to do is drink good coffee. It really is the simple things that bring us most joy. Finding a unique cafe to sip on a good cup of coffee is always a favourite pass time of ours. Upon arriving in London, I Google searched ” best coffee shops nearby” and Rapha Cycling Club London (RCCLDN) was at the top of the list. As two cyclists on the hunt for caffeine it couldn’t have been more fitting. RCCLDN’s storefront included a fully operating cafe. What blew us away was the cafe’s big screen TV behind the bar playing Le Tour de France and the glass top coffee tables with cycling jerseys and memorabilia encased beneath the glass surface. Although the coffee itself was a bit of a disappointment, the store and cafe setup was impressive.
For every road trip we always pack an assortment of snacks that are keto-friendly – nuts, seeds, dark chocolate. For this particular trip to London we also baked a batch of these low-carb blueberry muffins. Needless to say, by the time we arrived in London there were not many muffins left – none to be exact.
Ingredients:
- 1 cup almond flour
- 3 tbsp coconut flour
- 1/2 cup shredded coconut
- 1 tsp baking powder
- 1/2 cup stevia sweetener
- 1/2 cup coconut milk
- 2 eggs
- 1 tsp vanilla extract
- 60g melted butter
- 1 cup blueberries
Directions:
- Mix dry ingredients.
- Add wet ingredients.
- Stir in blueberries and walnuts.
- Bake for 30 minutes at 175. Voila!
