This was my very first attempt at making homemade sweet potato fries – insane, I know. These were so incredibly delicious they have become my new favourite dish/snack/side to make and it is soooo easy!

Carbohydrates and I have always had a love-hate relationship. When I was younger I became afraid of them because I thought they would make me gain weight. Then, when I started taking care of my diabetes I completely avoided carbs out of fear of my blood sugars being too high and not being able to control them. This was extremely dangerous as my blood sugars would be running too low at times and my energy and mood levels also declined as a result of this. Whenever I am getting together with family and friends for special occasions I always like to bring a sweet treat along to share with everyone. For one, so that I can selfishly enjoy a yummy sweet that I wouldn’t eat on a regular day, and two, because I want to show those around me that dessert can be delicious, sweet and healthy too!
