Low-carb Cheesecake

My blood sugars have been all over the place the last few weeks. I’m uncertain if it was a result of all the wedding excitement, international travelling or changes in the weather and temperature. It’s most likely been a combination of all of the above and I’ve been heavily considering putting my OmniPod back on my arm now that the wedding has passed, however, I am enjoying the freedom of not being tied to any devices. Roasted Butternut Squash Soup

I always struggle with what to write at the beginning these posts; this one is no different. I’m going to go off topic a little here and share with you a quick story. In early December last year, I went on a last minute vacation to Europe. Literally, I booked my flight and within less than two weeks I was landing in Lisbon, Portugal. I had booked the trip right in the middle of one of my school’s biggest classes and I had a final exam and assignment due the day after I returned from my trip.
