Whenever I eat sugar it wrecks havoc on my body. My blood sugar spikes and then drops, the next day I will feel like I’ve been hit by a bus (I call these sugar pains), and I literally feel like all of my energy has been sucked out of me. This is what happened to me just last weekend when I got in the Christmas spirit, put on some Christmas tunes, poured myself a glass of wine and had a baking frenzy going all out with a sugar battle – sugar one this round.
An interest that I share with my two (almost three!) year old nephew is baking, or as he calls it “making“. I like to get creative, test new recipes and tweak old ones with my own personal touch. I love finding a recipe that is considerably unhealthy and filled with foods that are common food allergens such as processed sugars, gluten, wheat, dairy, etc. and challenging myself to turn the recipe into a delicious and nutritious masterpiece. Lately, I’ve been having to run out the door super early in the mornings and so I wanted to make something that I could grab on-the-go that was filling and nutritious. One of my two year old nephew’s favourite passed times is baking, or as he calls it, “making”. He loves to watch me in the kitchen cooking, baking, making dinner, and even doing the dishes. Knowing that he loves being in the kitchen so much, whenever I have a day with him I always like to spend time with him in the kitchen making something, incorporating delicious and healthy foods. Whenever I am getting together with family and friends for special occasions I always like to bring a sweet treat along to share with everyone. For one, so that I can selfishly enjoy a yummy sweet that I wouldn’t eat on a regular day, and two, because I want to show those around me that dessert can be delicious, sweet and healthy too!
